Green Goddess Salad

This Green Goddess Salad is as nutritious as it is delicious. Finely chopped cabbage, cucumbers, and chives provide a satisfying crunch, while the creamy avocado and basil-based dressing ties everything together. It's nutrient-dense, fully vegan, and perfect as a dip with tortilla chips or as a standalone side dish.

Chop Veggies

Finely dice the cabbage and cucumbers into very small uniform pieces. Place them in a large bowl with the chopped chives.

Make Dressing

In a blender or food processor, combine basil, spinach, avocado, olive oil, lemon juice, garlic, nuts, and a pinch of salt. Blend until smooth and creamy. Add a splash of water if needed to loosen.

Combine

Pour the dressing over the chopped vegetables.

Toss & Serve

Mix thoroughly until every piece of vegetable is coated in the green dressing. Taste for seasoning and serve immediately. Can be eaten with a spoon or scooped up with chips.
