Rainbow Quinoa Salad with Lemon Dressing

Cook the Quinoa
Rinse the quinoa thoroughly. In a medium saucepan, bring water and quinoa to a boil. Reduce heat to low, cover, and simmer for 15 minutes or until water is absorbed.

Prepare Vegetables
While quinoa is cooking, wash and chop the tomatoes, cucumber, and red onion. Place them in a large salad bowl.

Make the Dressing
In a small jar, whisk together olive oil, lemon juice, salt, and pepper until well combined.

Combine and Serve
Fluff the cooked quinoa with a fork and let it cool slightly. Add it to the bowl with vegetables. Pour dressing over the top and toss to combine. Serve immediately or chill.
